Lagenaria siceraria, also known as squash, bottle gourd or long melon is a vine grown for its fruit, which can be harvested young and used as a vegetable.

Healthy Recipe;  Churaka vanpayar Thoran
Ingredients

  • Churakka (Bottle gourd) – 1 kg
  • (Finely chopped)
  • Van payar (Black eyed beans) – 200 gm
  • Jeera – ¼ tsp
  • Turmeric powder – ½ tsp
  • Garlic – 5 nos,
  • Plain raw rice grains – 2 tbsp
  • Coconut oil – 3 tbsp
  • Dry red chillies (Kollamulaku) – 2 nos

Method
Peel off the skin and deseed the bottle gourd.  Clean it well and chop it finely.
Clean the vanpayar and cook it separately in a pressure cooker.
Place the grated coconut, cumin seeds, green chillies, garlic, and turmeric powder and curry leaves in a mixer bowl and run it once to get a coarse form.
Mix the above with the finely chopped gourd and salt.
Heat oil in a pan or a kadai.
Splutter mustard seeds and saute dry red chillies, raw rice grains and curry leaves.
Add the gourd-coconut mixture and mix well.
Cover and cook on a low flame. Stir occasionally.
After 2 to 3 mins, remove the lid, add the cooked van payar and mix well again.  Continue to cook, till done.
